It’s no shock that summer is somewhat of a chaotic time.
Whether you’re traveling, or perhaps checking off your 2025 to-do list with the extra time you might have, moving somewhere new, possibly taking care of your kids who are on summer vacation, or maybe even tackling a hectic work season…
Summer can be hard!
That said, when ideating this week’s menu, there were a few criteria I had in the back of my mind:
Should be (somewhat) easy
Must use watermelon (my summer favorite)
Introduce an old recipe in a new way (to help make things easier)
and,
Don’t use the oven too much (it’s too hot outside)
Just know that it’s alright if you’re struggling this summer—we are very much in this together. May the next couple of weeks, until we reach August, be somewhat helpful for those in the same boat.
So without further ado, let’s get to some easy cooking.
