Hello!

I'm tuning in this week from a local coffee shop.

As some of you may know (if you’ve been keeping up with me on Instagram), I moved this past Saturday, and not to a different city, just right down the road.

We found a place double the size (we were originally in a 500 square-foot apartment), with no upstairs neighbors (we previously had a very active dog living above us), and most importantly, a teeny-tiny yard that holds space for our grill (TIME FOR MORE MEAT ON A STICK!!!!).

While our new place feels like a massive upgrade, there are a few things we’re still figuring out - number 1 being how to install WiFi with no place for our coaxial cable to screw into. And since my hotspot data has been completely exhausted for the month, we’re going with the flow (or at least attempting to) and taking advantage of the free WiFi at a local coffee shop for now.

That said, filming has been difficult these past 2-3 weeks, but I hope to get back on schedule this week.

To make life a bit easier this week, we’re riffing on previous recipes and bringing them to life in new ways. We’re also sticking to a single cuisine, while using shortcut ingredients, to reduce prep time and save money on groceries.

Thank you in advance for your support and understanding while I navigate this newsletter and my overall content in chaotic times. I appreciate every one of you in this Restaurant Dropout community and truly cherish each week I get to cook with you all from afar. I mean that from the bottom of my heart.

Day 1: Southwest Chicken Burritos

Day 4: Elote Shrimp Tacos

+ Cilantro-Lime Rice on the side

Day 5: Burrito Bowls

  • Black Beans

  • Romaine Lettuce

  • Cherry Tomatoes

  • Chipotle Dressing

  • Cilantro Lime Crema

This Week’s Grocery Total: $51.18

This week’s total was a bit higher than I had anticipated considering the grocery list was on the lighter side. However, since we are incorporating some time-saving ingredients (like fire-roasted corn and flour tortillas), we’re paying the price. But, then again, this is technically $10 per meal (and $5 per person), which is still pretty incredible.

As always, this grocery total is non-inclusive of proteins, pantry essentials, and ingredients I source from Costco in bulk (like Greek yogurt).
