The best part about a long-awaited trip (or vacation) being over is having the new-found ability to approach each day with a clear mind. No back-of-mind, lingering thoughts regarding planning or logistics eating away at creativity (or productivity for that matter).
It’s actually quite freeing.
The other benefit of coming home from a long-awaited trip is desperately craving light, healthy foods.
This week, I wanted foods that made me feel revived - foods that scream fresh, bright, and rejuvenating. No heavy (premature) autumnal or September-forward dishes here (we’re actually still grasping onto summer like we’re never experiencing it again).
Note: I know you’re probably going to roll your eyes at me for having pizza on what I’m defining as a “fresh & bright” menu, but in my defense, it’s a salad pizza. Life’s all about balance, okay!?!
