A Week for Eating Your Veggies
featuring Oven-Fried Chicken Sandwiches, White Chicken Chili, & more
With January coming to an end, I wanted to explore ways to truly indulge in the vegetables that are in season; however, given that the seasonal produce available isn’t necessarily abundant, we’re using canned (or frozen) goods to supplement.
This is also a week dedicated to closing out a health-focused January—it’ll feature oven-fried (i.e., baked *sigh*) chicken, stew thickened with beans (more fiber!!!), and a hefty amount of cabbage (my favorite superfood).
