A Family-Style Menu
featuring Chicken Parmesan Soup, Ribollita Skillet, & Chicken Thighs with Herby Couscous
Since the inception of Restaurant Dropout (we’re approaching 2 years, isn’t that just…crazy?), 98% of the meals have been written to yield 2 servings. While this works for many, I know there is demand for larger quantities. Those of you with kids, larger appetites, or both—kids with larger appetites.
I hear you, I see you.
Consider this week a trial run: a “family-style” menu suited for 4.
Plus, it’s a menu with a little bit of everything that will hopefully feel just right for this dreary moment in time. A soup to soothe and provide comfort, an easy-to-enjoy skillet to look forward to, and a few other dishes that hopefully pique your interest.
If you’re like me, someone living in a household of just 2, I can assure you that, through eating this menu myself, it’s great to have seconds and leftovers for lunches.
