A Super Simple Summer Menu

One of the busier parts of the year has arrived. You’re returning from—or preparing for—a big trip, juggling summer festivities, and figuring out what to eat in between.
I completely understand the urge to eat out or order in times like these.
Instead, I present to you a menu intended to make things easier amidst the chaos. It leans on store-bought ingredients (such as frozen bagged brown rice), one seasoning blend that gets used across three dishes, and dinners that feel right at home in the middle of summer.
Plus, one of my favorite Restaurant Dropout creations makes a return: the Jalapeño Cheddar Chicken Meatball (and Burger).
