To close out this celebratory period, this week is all about revamping the classics.
While the early-day dishes, like the Caesar-ish Flatbread and Chicken Tinga Tostadas, were great in the moment, I always find it satisfying to revisit a dish with a new perspective, transforming it into something that feels a bit…refreshed.
Given my recent fixation on skillet pizzas (they’re just so easy) and simpler, yet still delicious, executions of a dish (like smothering fish with a compound butter), this week is all about taking inspiration from some of your favorites (and mine) and turning them into something that feels right for this moment in time.
May this be a reminder that things don’t always need to be brand new to feel shiny and exciting.
