Hi, hello, and HAPPY FRIDAY!!!!!!

Warmer weather, longer days (i.e. more sunlight), and, in my opinion, the better season of produce have all finally arrived and it’s the annual reminder I needed that I LOVE spring.

I’ve always been a bigger fan of things that scream bright, vibrant, and fresh so you can see why I’m not necessarily drawn to the warm, cozy, and dark vibes that fall and winter have to offer. It’s nothing against fall or winter - it’s just a personal preference.

That said, since ‘tis the season of bright, vibrant, and fresh, I’m cooking with maximum inspiration, hence why I’ve been excited WEEKLY about the menus we’re cooking - specifically this one.

Day 1: Fajita Tacos

Elements:
  • Chicken

  • Bell Peppers

  • Onions

  • Romaine-Cabbage Blend

  • Cilantro-Lime Crema

  • Queso Fresco

  • Avocado

+ a side of Refried Beans & Cilantro-Lime Quinoa

Day 2: Pesto Butter Salmon with Herbed Quinoa Salad

Elements:
  • Pesto Butter

  • Salmon Fillets

  • Quinoa

  • Queso Fresco

  • Lemon Basil Vinaigrette

  • Snap Peas

  • Cucumbers

Day 3: Chicken Tinga Tortas

  • Braised Chicken Tinga

  • Telera Rolls

  • Cilantro-Lime Crema

  • Romaine-Cabbage Blend

  • Pickled Jalapeños & Shallots

  • Queso Fresco

  • Avocado

Day 4: Burrito Bowls

  • Cilantro-Lime Quinoa

  • Braised Chicken Tinga

  • Pinto Beans

  • Romaine-Cabbage Blend

  • Queso Fresco

  • Pickled Jalapeños & Shallots

  • Crispy Tortilla Strips

  • Cilantro-Lime Crema

  • Guacamole

Day 5: Spring Panzanella with Honey Mustard Chicken Skewers

  • Toasted Bread

  • Lemon Basil Vinaigrette

  • Mint

  • Chives

  • Dill

  • Snap Peas

  • Cucumbers

  • Honey Mustard Chicken Skewers

I decided to go to my (grocery store) mecca, which happens to be a similar price point to Whole Foods (aka Whole Paycheck).

Although I felt like a kid in a candy store, I ended up paying a $10-$12 premium for all-organic produce and local shelf-stable goods.

(I merely changed it up to see if they had ramps. They didn’t.)

Total Cost: ~$75

Although around $10 more than usual, we’re still looking at $7.50 per meal per person, which is far less than almost all restaurants (even fast food)…
