This week we’re diving into a menu with foods from all over. You’ll find dishes like Hawaiian Garlic Shrimp, with an origin tracing back to the North Shore of Hawaii, as well as a Tostada Flatbread, inspired by the Tostada Pizza - native to my childhood favorite restaurant, California Pizza Kitchen.

Finally, we’re finishing the week off with the way we started: Shrimp. Except we’re making Shrimp Po’Boys, famously derived from Louisiana.

Day 1: Hawaiian Garlic Shrimp with Coconut Rice

Elements:
  • Hawaiian Garlic Shrimp

  • Lemon

  • Coconut Rice

  • Maple-Sesame Side Salad

Day 2: Tostada Flatbread

Elements:
  • Cornmeal Flatbread Dough

  • Refried Black Beans

  • Mexican-Style Cheese Blend

  • Cilantro Garlic-Marinated Chicken

  • Romaine Cabbage Blend

  • Cilantro Lime Crema

  • Fire-Roasted Salsa

  • Crispy Tortilla Strips

  • Sliced Avocado

Day 3: Coconut Crispy Rice Salad

Elements:
  • Crispy (Coconut) Rice Cakes

  • Romaine Cabbage Blend

  • Sliced Mango

  • Shaved Chicken

  • Maple-Sesame Vinaigrette

  • Shredded Carrots

  • Avocado

  • Pickled Fresnos & Shallots

Day 4: Cilantro-Garlic Steak Tostadas

Elements:
  • Tostadas

  • Cilantro Garlic-Marinated Steak

  • Romaine Cabbage Blend

  • Pickled Fresnos & Shallots

  • Cilantro Lime Crema

  • Fire-Roasted Salsa

+ a side of Coconut Rice and Refried Black Beans

Day 5: Shrimp Po’Boys with Lemon Aioli

Elements:
  • Telera Rolls

  • Lemon Aioli

  • Crispy Cornmeal-Crusted Shrimp

  • Romaine Cabbage Blend

  • Roma Tomatoes

  • Pickled Fresnos

This was another ✨low-cost✨ week…

My grocery store total was ~$40.

However, I did have a few things at home, that I didn’t buy, like all of the essentials, cornmeal, jasmine rice, and Greek yogurt (which I buy at Costco in bulk).

I will note that there are some things on the pictured receipt that I ended up removing from the intended recipes & ingredient list (like the additional mangoes and parsley), as well as 2 things that I added (like ginger and 1 more can of black beans).

Once again, my grand totals don’t take into account proteins, since those will vary from person to person (depending on protein preferences).
