We are spending next week in a VRBO with extended family and while I don't want to cook all the time, eating out every meal isn't for us either. So, my plan is to pick a menu, pack my shelf stable ingredients and essentials and shop for the fresh stuff when we arrive. Can't wait to wow my family with these meals. Now which week to choose?
Vacation menu Recap. I chose week 1 and it was a great menu for lunches our family of 6 to 8 adults. It worked out pretty well by tripling or quadrupling ingredients. Ran short of the cilantro crema, which I only doubled. I appreciate the evolution RD has undergone from all video based recipes to the fabulously detailed written recipes and lists. I felt good providing fresh and delicious food throughout the week.
I can't wait to see what the holiday weeks are going to look like! I LOVE to cook during the winter holidays and always love trying new things. Can't wait to see how RD continues to evolve!
I’m always curious about washing herbs. They don’t dry well and then chopping is so much harder. at some point when you do parsley or cilantro again, could you share your tips and tricks?

Don’t be too discouraged! She is basically a one woman show and for the small fee to be part of the Substack even two weeks worth of meal plans is hours and hours and hours of her time which is well worth the small amount charged. She has some really great meal plans in those 12 past weeks that even I’m excited to repeat And I have been here since week one. Hope you will enjoy the things she’s got to come because so far this is been such a cool newsletter to be part of.
